PUMPKIN KOOTU;

       Pumpkin kootu is one of the yummiest and tastiest recipes of south India especially Tamilnadu. It’s sweetness impresses even kids. Lived in a village I have witnessed this particular recipe from Thaipoosam festival. The festival is incomplete without this kootu. The aroma will fill your house. INGREDIENTS:

        Pumpkin (diced)  - 1cup

      Onion  (big)  - 1    (finely cut)

     Garlic – 3 (crushed)

    Sambar powder  - 1 tbsp

   Tamarind extract  - ½ cup

  Jaggery (grated)  - ¼ cup

 

METHOD:

Ø  Heat up 1 tbsp of oil, add mustard seeds, fenugreek seeds, 4 dried red chilli, crushed garlic and a few curry leaves. Allow it to splutter.

Ø  Add onion and saute well until they are translucent

Ø  Add diced pumpkin and give it a mix

Ø  Add sambar powder and mix well and allow it to cook for two minutes

Ø  Add tamarind extract and cook until the raw smell goes off

Ø  Once done add jaggery and give it a mix

Ø  Turn off the stove and serve hot

 

 

 

NOTE:

v  You can cook a little longer or lesser to get your desired consistency

v  Do not add too much of sambar powder or tamarind extract

v  After adding jaggery , make sure to cook on medium flame
